Kook en Geniet's famous Banana Bread

During this lockdown period, I am going try and master more fun and exciting recipes, starting with a trusty old favorite just to get my "baking legs" back, Banana Bread!

This simple banana bread recipe will take you a maximum of 30 minutes to prep (even if you are an amateur baker like myself, and I prepped this bad boy in under 20 minutes!)
With over 1,000,000 copies sold, cooking from the Kook en Geniet cookbook by S.J.A De Villiers is a like a right of passage... and don't worry if you can't speak Afrikaans, they have printed an English version as well!
Ingredients:
500 ml Flour
125 ml Butter
1 tsp Vanilla Essence
2 tsp Baking Powder
125-250 ml Sugar- depending on how sweet you like it
4-6 Ripe Bananas (mashed) - I only used 4 bananas as I am not the biggest fan of a pungent banana taste
Recipe:
Add the sugar, butter and vanilla essence together and mix thoroughly (I used a high-speed 2 prong whisk- if that is even the technical name for it)
Sift your dry ingredients in and mix again
Add the mashed bananas and mix again
Put it in an oven-proof baking tin (make sure to mix evenly and align the tin with either butter or spray and cook)
Put in the oven for 1 hour (I let it bake for 45 minutes, just check the bread after 40 minutes by putting a knife through the middle, if the mixture is stuck on the knife, it needs tog o a little while longer)

This bread is perfect for Sunday brunch or afternoon tea. So enjoy with family or your roommates, it's not like any of us are going anywhere for the next 18 days!
