Nachos Nachos Nachos!

Have you ever been so excited about having nachos and then they turn out dry and disappointing? If you add my salsa recipe into the works, be prepared for tasty, flavorsome, juicy nachos!

What you will need:
Nachos:
1 Pack Nacho Chips
1.5 Cups Grated Mozzarella and Cheddar Cheese mix
4 Fresh Tomatoes
a Handful Fresh Coriander
4 Pieces Sun Dried Tomatoes
Juice of 1 Lemon
Guacamole:
2 Ripe Avocados
1 Dollop Plain Yogurt (I always use Double Thick)
Fresh Coriander
Juice of 1 Lemon
Side Dips:
Smooth Ricotta or Sour Cream
Recipe:
Nachos:
Chop up the fresh tomatoes and add the sun dried tomatoes, a pinch of salt, lemon juice and coriander into the blender and blend until a smooth paste. Add salt to taste.
Spray some spray 'n cook / place some oil a baking tray and place a layer of baking paper on the tray.
Place your layer of chips on the tray, followed by dollops of tomato salsa, and finally some cheese.
Layer the chips, salsa and cheese in that order until everything is done.
Pop the tray in the oven until the cheese is melted and the chips have some colour on them.
Guacamole:
Chop up the coriander and mash up your avocados, add the yogurt and mash all together until smooth. Add salt to taste.
